Quick and Easy Pizza Recipe: No Yeast Needed!

I love pizza, but I realised I had no yeast (and I like to make everything from scratch if possible) so this is my scone-base pizza! Enjoy!

Time taken: 45 minutes total
Serves 2 to 4 people (depending on how hungry you are!)

Ingredients

Base (Make sure you have a small amount of spare milk/flour to make it up if it is too dry or too wet)
250g self raising flour
50g cold (block) butter
100ml milk

Topping (You can put almost anything on your pizza! The only thing is I would recommend your sauce on the base, and enough cheese to cover the sauce. And the rest? The world is your oyster!)
Tomato puree // BBQ sauce
Cheese (enough to cover sauce
6 slices of pepperoni
1 onion
Ham
Jalapenos


Method
Pre-heat your oven to 200c fan
1. Sieve your flour to remove lumps and add the cold butter, cut the butter into small squares.
2. Rub the squares of butter until it resembles breadcrumbs.
3. Add your milk slowly and mix with a knife or spoon, stop adding the milk when it becomes a dough like consistency (not sticky but all stuck together in a ball).
4. Put some flour on your worktop/chopping board and put your dough  on it. Flour your hands too! Take a rolling pin and roll it out (or if you do not have one - like me - just kneed it with your fingers, turning it over regularly to try and help it to stay flat) to about half a cm thickness. It will rise a little bit so you do not want it to be too thick, but thick enough that it is stable.
5. Place base on a pizza stone (or if unavailable grease-proof paper on a baking tray).
6. Put a thick coverage of tomato puree (or substitute) over your base, cover well with cheese. If you want a stuffed crust, put more cheese round the edge and fold the crust over, pushing/sealing it by pushing your fingers down into the base.
7. Place your toppings! I chose pepperoni, a little bit of ham and raw onion (I would have used jalapenos but I ran out). The raw onion will caramelise nicely.
8. Place in the oven for roughly 20 minutes. It may take longer or shorter depending on how good your oven is and how thick your base is. To determine if it is done, tap the base and it should feel hard.
9. Cut and enjoy! Serve with salad, chips, garlic bread, whatever you fancy... And a bev!
